Universal indicator paper covers the whole pH scale in a single reading. It is the paper to keep in a drawer for the question that comes up unannounced: is this acid or alkali, is the drain rinse neutral, did that spill land somewhere dangerous.
Universal paper reads to about one pH unit. That is the right answer when you do not know where a sample sits and need to find out quickly, and the wrong tool the moment a number has to go in a record.
Once a sample is bracketed — say it lands near 5 — a narrow-range paper resolves that window several times more finely. The efficient habit is universal first, narrow second, and it takes two strips instead of one.

The 1–11 paper spreads the same colour set over a slightly narrower scale, so it reads a little better than 1–14 across the range most aqueous work actually occupies. Choose 1–14 only if strongly alkaline samples are genuinely on the bench.
The booklet is the portable format: it fits a pocket, tears cleanly, and carries its colour chart on the cover — worth having for anyone testing away from the bench.
