Where a swab samples a hand-sized area, a sponge samples a surface. That is the difference that matters in food processing: pathogens on a production line are rare and patchy, and finding them is a question of how much area you can cover, not how carefully you cover a little of it.
The sponge arrives inside its own filter bag, and the bag is where the sample is later diluted, stomached and drawn from. Nothing has to be transferred, so there is no step at which the sample can be contaminated by a container, a pipette or a bench. For a Salmonella or Listeria result that will shut down a line, that closed chain is the whole design.
Buffered peptone water is the standard pre-enrichment for Salmonella work and the general recovery medium. Letheen and D/E neutralising broths neutralise sanitiser residue, which is what you need for a swab taken after cleaning — otherwise the disinfectant carries on working in the bag and the result comes back clean because everything died in transit.
The versions supplied with gloves are not a convenience item. A sponge handled with a bare or reused glove samples the person as much as the surface, and a positive that came from the sampler's hand is worse than no sample at all: it triggers a recall investigation that finds nothing.
Sample a large defined area in a consistent pattern, turning the sponge partway through to use both faces. Seal the bag, keep the sample cool, and get it to the laboratory the same day.
