This Hanna Instruments turbidity meter measures haze in beer, on the scale the brewing industry uses.
Haze is the first thing a drinker notices and it has two causes that behave differently: chill haze, which comes and goes with temperature, and permanent haze, which does not. Measuring at both temperatures separates a beer that will clear from one that will not.
A turbidimeter shines light through a sample and measures what is scattered sideways by suspended particles. It reports how cloudy the water is, not what is in it — and cloudiness is worth measuring precisely because it hides everything else, including organisms that disinfection is supposed to reach.
Anything that scatters or absorbs light affects the result: bubbles, colour, a scratched cuvette, a fingerprint. Sample handling matters as much as the instrument.
Degas the sample before reading; bubbles scatter light exactly as haze does and the instrument cannot tell them apart.
