This Hanna Instruments thermometer measures food temperature with an ultra-fast type K probe.
A thermocouple measures temperature from the voltage generated where two dissimilar metals meet. It has almost no mass, so it follows a changing temperature almost instantly — which is what a food probe has to do. Type K covers the widest range and is the general-purpose choice. An ultra-fast probe settles in a couple of seconds, which is what makes checking every item on a line practical rather than theoretical.
Most wrong temperatures are not the instrument's fault. A probe placed too shallow, read before it settled, or put in the thinnest part of a piece of food gives a confident number that was never true of the product.
Insert to the depth marked, into the thickest part, and wait for the reading to stop moving. Check the instrument against an ice-water slurry periodically — that is a real reference point, and it costs nothing.
