This Hanna Instruments thermometer measures two type K thermocouples at once, with the difference between them.
Many questions are about a difference, not a temperature: the rise across a heat exchanger, the gap between supply and return, whether one side of an oven runs hotter. Two channels answer them at the same instant, which two instruments cannot.
Most wrong temperatures are not the instrument's fault. A probe placed too shallow, read before it settled, or put in the thinnest part of a piece of food gives a confident number that was never true of the product.
Insert to the depth marked, into the thickest part, and wait for the reading to stop moving. Check the instrument against an ice-water slurry periodically — that is a real reference point, and it costs nothing.
Use two probes of the same type and length; a differential measured with mismatched probes carries their mismatch as an error.
