An infrared thermometer measures the heat a surface radiates, so it reads a temperature without touching anything. That is the entire point: it works on surfaces that are moving, live, contaminated, sterile, or simply too hot to approach.
It reads the surface, never the inside. A carton of milk read from outside reports the carton, and a wall reports the paint. For anything where the internal temperature is what matters — food safety above all — a probe thermometer is the instrument, and an infrared reading is a screening step that tells you which item to probe.
The instrument averages everything inside a cone that widens with distance. Stand too far back and the reading includes the bench, the wall and the air around the target. Get close enough that the target fills the spot, and know the ratio for the instrument you are holding — this is the single most common source of wrong infrared readings.
Different surfaces radiate differently at the same temperature. Matt, dark surfaces read accurately; shiny metal reflects its surroundings and reads badly, often dramatically so. The usual fix is a patch of matt tape or paint on the metal, measured once it has reached the metal's temperature.
Electrical panels and connections, motors and bearings, steam traps and pipework, refrigeration, and the screening pass in a food-service temperature round. Anywhere the alternative is switching something off or putting a hand near it.
